Asafoetida
Asafoetida It is a plant from the Umbelliferae family, herbaceous and perennial. Its root is slightly thick and fleshy. The leaves are highly divided and feathery, while the stem is hollow, fleshy, and can grow up to two meters in height. Its flowers are yellow and appear in umbrella-like clusters at the top of the stem. In the early years of its life, this plant does not have a visible stem, and its leaves spread across the ground. It is known in pastures as Kumah and Angoza Kumah. The fruit of this plant contains two seeds, which are dark brown to black, oval-shaped, slightly flattened, and very foul-smelling. The resin of this plant, which is known as Asafoetida, is secreted when the root or lower part of the stem is cut or slashed at the neck in late spring. This foul-smelling resin gradually solidifies when exposed to air.
This plant grows in barren, dry, and calcareous lands of hot regions in Asia. It is native to the steppes of Iran and Afghanistan. Asafoetida has a pungent, bitter, and acrid taste. Its smell resembles garlic and is foul, overpowering, and unbearable.
